Spring Cleaning Equals for Clean Eating

So I have to say my biggest inspiration for healthy eating and working out comes from my sister Amy. There is no one more dedicated then she is. Grad school caused some added stress and weight gain but now that I am graduated no more excuses. So my mom and I started reading a book called The Virgin Diet by J.J. Virgin and the goal is to cut out the 7 foods that cause intolerance and inflammation in our bodies. My mom and I have been following the diet for about a week now and so far I have increased my energy levels, decreased the belly bloat, and just plain feel better. Each morning I have my shake which consists of:


  • Coconut milk
  • Rice protein powder (chocolate or vanilla)
  • Frozen berry mix
  • Fresh ground flax seed
  • Chia seed


My other meals consist of a salad with a lean protein and an apple or a brown rice tortilla with lean meat and lettuce. I stick to freshly made salsa for my dressing. For snacks I choose raw almonds, beef jerkey (homemade), or a KIND bar. I am also trying to increase my water intake to 50% of my body weight; which thus far has been the biggest challenge for me.

I have been turning to Pinterest for clean eating ideas as well and my new favorite treat is chia pudding!

Chia Pudding


Ingredients:
1/4 cup chia seeds 
1 cup coconut milk unsweetened
1 packet stevia

Mix in mason jars and let settle in fridge overnight.

The next day mix fresh chopped strawberries and sprinkle some chocolate coconut ground chia and flax seed blend on top and enjoy a delicious but healthy treat! I'm hooked!

Spring Cleaning

I apologize that it has been since October that I wrote on my Blog. Many things have happened since then. I graduated with my Doctor of Physical Therapy degree, moved back home, passed my licensure exam, and started my first big girl job as a physical therapist! 

Now that I have more free time I want to get back to my weekly postings on the blog. My goal is to post on my: 
     -weekly inspiration page on my current bible studies
     -weekly workout routine/playlist
     -weekly recipe or clean eating tip

Now you all will have to keep my honest and be sure I stick to my blogger schedule!
